Cha Mteh Plaok Sach Ko

Cambodian stir fry bell peppers with beef. Rich in vitamin A, B6, C, potassium, manganese, niacin, iron, thiamin. Great combination of vitamin and protein from beef. Enjoy Cambodian food!

Ingredients:

Oil, oyster sauce, sugar, soy sauce (kikoman) black pepper, water, garlic, potato starch (you can use tapioca flour), beef, red and green bell peppers, onion, green bean, carrot.

-Wash bell peppers and green bean well.
Cut the green bean tips. Peel carrot skin.
-Julienne cut ALL VEGETABLEs and beef. (see photos)
Mince the garlic.
Dissolve potato starch with water.

Process:

1) Heat frying pan or a wok on high heat. Add oil when the pan is hot. Then toss in minced garlic. Cook it until turns golden brown.
2) Reduce to medium high heat, add oyster sauce, sugar and soy sauce and cook them for about 1 minute.
3) Add beef, potato starch into the pan. Stir well and cook for about 2-3 minutes until the beef turn lightly brown. Add some water if the sauce gets thick (from potato starch).
4) Then add green bean and carrot. Cook until they turn a little soft.
5) Add bell peppers, cook 3-4 minutes. Add more soy sauce, oyster sauce or sugar if needed.
6) Add onion and black pepper, cook 2 minutes. Do not overcook onion, keep it a little crispy.

Khmer stuffed fuzzy gourd with minced prawns.

-Peel and wash gourd, cut into 5 rings, remove the seeds.
-Remove prawn shells, cut the tails (keep 5 tails for stuffing decoration and the rest toss them in the soup for flavoring). De-vein and wash thoroughly. Mince and season the prawns with black pepper and potato starch. Mix well.
-Stuff the gourd rings with peppered minced prawn paste.
-Put water, chicken broth, stuffed gourd rings and shrimp tails  into a medium cooking pot, cover it and bring to boil over medium high heat.
-Lower heat and let it lightly simmer until the gourd is translucent and soft.
-Add chicken powder and salt. Carefully stir and taste, adjust your taste bud! (Add boiled water if the soup is salty).
- Garnish with chopped green onion, coriander, and long-leafed coriander. Serve! Enjoy Cambodian soup! :)

1 mediums size

12 medium prawns
1 3/4 cup chicken broth
1/8 tsp of black pepper
1/2 tsp salt
1/2 tsp
chicken powder (you can use granulated chicken flavor bouillon)
1/4 tsp of
potato starch (or tapioca flour)
6 sprigs of coriander (wash well)
1 long -leafed of coriander (
wash and julienne cut 1 inch)
1/2 green onion, chopped

Talked to my grandma on the phone. I don’t get to see her much or talk to her that often but every time I hear her voice I feel so bless.  My grandma is 90 years old and has lived through happy time and sad time Cambodia. She had 12 children, lost 10 during the war and now only two left. Tragic war has left her heart wounded but for some reason, she refuses to talk about war, about her lost family, about sad Cambodia. She wants to share with me about the true HAPPY CAMBODIA because that how she grew up, it was a great country. She was one of the historic person who lived through the jewel Cambodia. Fun, rich, no crime, prosperous, homogeneous society, very modern and there so many intellectuals. There were high social status, high class and high moral. She said when westerners and foreign theories invaded Cambodia, everything torn apart and became a  senseless society. Cambodia lost so many lives and land. Greed and power over rule all mighty.

My grandma said to me “chao srey yeay, chao khom rean nah chao! kom plich jouy srok komnert robos kluan” (My granddaughter, study hard, do not forget to help your birthplace). Yes of course grandma, Kampuchea will always be in my heart. :)

Delicious Somlor Kako

Some of you are required to take vitamin daily. Have you ever considered tossing away your vitamin tablets and start eating naturally?  This soup has more than what you need. A bowl full of vitamin! Somlor Kako is authentic Cambodian dish made from vegetables that are high in vitamin and minerals. It is tremendously nutritious. Also good source of protein from meat and fish. A twist of native freshly homemade spice gives the best aroma. This whole hearty soup is a real treat for vegetable lovers. Serve with steam rice! See recipe below. Somlor Kako requires a lot time to make, so many processes but the result is very rewarding.

 Making Somlor Kako:

1) Heat oil in cooking pot,
Put A in the pot, stir for 5 minutes until the herb/spice turn brown and the  fragrant comes out, push it to the side. Then add B, stir until the meat turn brown. Add 1tsp of salt, sugar and roasted rice.

2) Add fish, pour some water, then cover and bring to boil.

Khmer Virtual Keyboard

KhmervirtualKeyboard I’ve come across Khmer keyboard where you can click and type in Khmer, then copy and paste the text wherever you want. I found it through http://cambodiahomesweethome.blogspot.com/. To use Khmer virtual keyboard go  to http://khmergo.net/vkeyboard/ (KhmerGO means Khmer language in Japanese, I think Khmer in Japan invented it). I pointed out two red arrows, the one at the upper left is where you type the text, the lower bottom with green button is ’shift’ key for sub-consonants.
I must tell you, it really makes life easier. I struggled for a long time figuring out Khmer alphabet on English keyboard. Still didn’t come out as I expected, some of the alphabet didn’t appear as it should be. It took me forever to write a few words but using Khmer virtual keyboard, it took me less than a minute to type the words below. It is SO NICE to be able to write in Khmer. Thanks to the creator for making it possible!

As far as Khmer font,
Only Windows Server 2008 and Windows Vista support Khmer font, if you don’t have one of these, you need to install Khmer font on your machine to able to read or write in Khmer language. There is a good link where you can download beautiful Khmer fonts. http://www.wazu.jp/gallery/Fonts_Khmer.html
